Join us as our favorite Boston, MA bartenders Justin Dibble and Lizzie Havoc join us once again for Mixology magic followed by the SMU Staff Association's game night with a trivia competition hosted by "TriviAddiction". Tune in anytime after 6:30pm to enjoy our mixologists or promptly at 7:15pm for our exciting trivia contest spanning nearly 40 questions across more than a dozen different categories including movies, television, literature, sports, geography, and more.

Beverage Ingredient List - Prepare ahead to mix with the pros or choose your favorite beverage and watch as they work their magic!

Drink #1: Southside

Served in a coupe glass or a martini glass

2oz Hendricks Gin: Hendricks has a light floral cucumber flavor- the type of gin you use for this drink is going to greatly effect the flavor. Stick to floral gins like Hendricks, stay away from bold flavored gins like Tanqueray which are going to be too overpowering.

1oz fresh squeezed lime juice

3/4oz demerara syrup

2 hearty sprigs of mint

1 lime

In your mixing tin/glass add ice, gin, demerara and one of your mint springs. Give the mint a few hearty slaps to express the oils, this will open the mint up a bit and add more flavor to your drink. Shake vigorously for 10 seconds and strain into your coupe glass, hold your mesh strainer over the coupe glass to catch any bits of mint, creating a “double strain”. Take the remaining sprig of mint, give it a few slaps and let it float atop your cocktail and enjoy!

 

Drink #2: Irish Old Fashioned

Served in an Old Fashioned glass/any whiskey/rocks glass

2oz Sexton Irish Whiskey, or any Irish Whiskey of your choice; this choice will be the deciding factor of the flavor of your drink. The Sexton is a whiskey with some dark fruit flavors, nutty notes, and balking spices since the whiskey is partly aged in sherry casks. The flavor of the sherry really pops. If you use a peaty, smokey whiskey, you’re going to have a much more earthy flavor. Irish whiskeys are all very unique, pick your poison carefully.

.5oz demerara (sugar in the raw) simple syrup

4 hearty dashes of angostura bitters

Cut an orange swath into a 1” square (the shape doesn’t effect anything but your drinker’s visual experience, cut the swath into a miniature Millennium Falcon if you like! You can even just tear the orange swath into about a 1” piece instead of cutting it, just be careful not to bend the piece so you don’t express/waste the oils.) and place it peel-side-up in your glass. Add a small dash of your Demerara syrup and one dash of Angostura bitters, and then muddle gently to express the orange oils. In a separate mixing glass add ice, whiskey, Demerara, and bitters and stir for 15 seconds. Add fresh ice to your glass with the orange peel segment, and strain your stirred cocktail over the ice into your glass. Add a Luxardo cherry garnish and express/squeeze a fresh orange swath on top (hold a lit, wooden match next to the swath for a second or two to heat the oils, and then squeeze the swath through the flame to caramelize the sugars and burn the oils as they land on top) of the drink. You can certainly skip the flame component, orange oils are delicious unmolested, but the orange peel flame thrower adds extra flavor, and let’s be honest: who doesn’t like a little fire magic? Cheers!

Demerara or Simple syrup. This is pretty simple to make ahead of time, but definitely make it in advance so it has a chance to cool prior to the zoom. For Demerara use sugar in the raw, for simple syrup just use regular white sugar. We prefer Dererara because it retains a little of the residual molasses flavors remaining from the sugar production when the cane is processed. To make either, measure out a 1:1 ratio of whichever sugar you choose to water and bring to a slow low boil on the stove and let simmer for a few minutes. You want all the sugar to be fully dissolved and for the mixture to thicken slightly. Remove from heat and let cool. Simple!

Angosturra Bitters. These are the OG bitters. Very easy to find.

An Orange. You want a slightly more bitter skin, full of oils here. Navel’s work well, as do Cara Cara’s (probably harder to find), but don’t go nuts trying to find anything exotic: Any orange from your local grocer will work; just make sure its fresh and has a healthy rind from which we can cut a swath.

Ice. You don’t need fancy ice or big clear cubes, but you’ll need enough to fill your whiskey or rocks glass. However, if you want a big clear cube, feel free to get froggy.

 

Tools Needed:

Cocktail shaker or Mixing tin/glass or something in which people can stir and chill/mix the drinks.

Hawthorne strainer. A metal strainer used to cover the top of your shaker/mixing glass and strain your drink ice free into your glass… this is a common bar tool but not often found in the home, substitutions can be made, like kitchen strainers, etc, but this is a great addition to any home bar

Mesh bar strainer this is used to double strain cocktails when mixed with materials that will slip through your Hawthorne strainer. Not having one isn’t the end of the world, it just makes for a neater/more aesthetically pleasing drink

Jigger or some other way to measure liquor- jiggers usually measure at 2oz, 1.5oz, 1oz, .75oz, .5oz, and .25oz.

Vegetable peeler or channel knife for cutting orange swaths.

Citrus Squeezer for squeezing your fresh limes, if you don’t have this exact tool never fear, using your hands will get the job done just fine

Bar spoon or any somewhat small spoon will work

Cocktail coupe/martini glass for the Southside

Basic rocks glass. For the old fashioned

Ice.

Large bowl to hold the ice you’ll use for shaking

Ice scoop for getting the ice into your cocktail shaker. (your hand works fine too)
